What difference does dry-ageing make, you ask? The process involves resting large cuts of meat in a controlled, open-air environment for an extended period of time. This helps to speed up the breakdown of muscle tissue in each cut of beef while also reducing their overall water weight, sealing in flavour and creating a melt-in-your-mouth texture in each and every bite.
