The salted capers from La Nicchia are made using the best capers from Pantelleria and sea salt.
With their characteristic colour, the capers from Pantelleria stand out from the others due to their firm texture and delicate flavour. Thanks to the use of the sea salt, their fragrance and texture remain unaltered over time.
Before using them, rinse them thoroughly in a colander and let them soak in water for a couple of hours. Dry them and dress them with a bit of extra virgin olive oil and use them as you prefer: they are excellent on their own, on crispbread, in sauces or to enhance the flavour of meat and fish dishes or even in salads.
