Compared to the production of the “classic” Parmigiano Reggiano PDO , there are numerous new elements: for example, the use of cows that have undergone surgery in the past is not allowed. Furthermore, all the ingredients used to produce the cheese must be Kosher certified: from milk to rennet, passing through salt.

Milking and milk processing in the dairy takes place under specific supervision. In the first case, a rabbi verifies the Chalav Yisrael nature  of the milk ; in the second case, the figure who monitors the process is that of the Mashgiach Temid. All the tools used in the processing and production process of the King of Cheeses must be Kosher. 

Furthermore, the seasoning takes place on specially sanitized wooden boards, so that the Kosher Parmigiano Reggiano is not “contaminated” by the wheels previously produced.
