Pecorino dei Monti Sibilini originates in the mountainous Parco Nazionale dei Monti Sibillini, a national preserve in the Le Marche region of central eastern Italy. The rind is soft straw-coloured when fresh, and hard, oiled yellow when mature. The interior is white and compact if fresh becoming more straw-yellow as it matures. Maturation can take as long as 2 years. For 140 years, Guffanti Formaggi's trade has been to know the places, the people, and the traditions of their home in the Alps, in order to select the best of the best of Italian cheese production.
