Bitto is an organic raw cow's milk from Berbenno di Valtellina, a commune located in Lombardia. Bitto is made in small batches over a wood fire by alpeggi — Alpine farmers — during the warm summer months. Bitto is a fat cheese, characterized by cooked and semi-hard paste. Its shape is cylindrical, smooth, with flat surface whose diameter ranges between 30cm and 50cm.
