Scimudin, meaning little cheese in local dialect, is a fresh, shortly aged, buttery, brie-style cheese produced in the province of Sondrio. The white rind hides a luscious, silky, smooth pate with a slightly nutty flavour. Scimudin is usually served as a table cheese, but it is also great when melted over polenta. For 140 years, Guffanti Formaggi's trade has been to know the places, the people, and the traditions of their home in the Alps, in order to select the best of the best of Italian cheese production.
