Made with raw milk from the brown Swiss cows of the cheese dairy owners, this firm, organic farmhouse cheese has a natural, rustic orange-brown rind covered in sparse white and blue mold. Washed in brine, the cheese is matured for 90 days, without the addition of ferments. It offers sweet aromas of grass, cellar, butter and hazelnuts.
Dotted with small holes (eyes) and a color varying from pale yellow to corn yellow depending on the season, its paste is firm but supple and its marked flavor is lactic and fruity. We also perceive a taste of hazelnut, clover, caramel and roasted notes.
