Fleurmier is the first fine cheese that we have developed and marketed. It was launched in 2000 when the Quebec fine cheese industry was barely taking off. It is also the first cheese from Laiterie Charlevoix distributed on a larger scale and by Aux Terroirs outside the immediate region of the National Capital. It was following the immediate success of Fleurmier that we began a sustained phase of development of fine cheeses. Fleurmier takes its name from a link between the terms fleur-de-lis crust and fer mier cheese.

 

Product Features

Soft cheese with bloomy rind, ripened on the surface.

Fleurmier is a typical soft cheese with a bloomy rind of the Camembert type. The milk comes from the Gouffre valley in Baie-Saint-Paul. This cheese is made by the solubilized curd method, which maximizes the quality for this type of product. Its rich and velvety paste has a fruity and nutty flavor without any aftertaste. Its texture improves with age and its taste develops without bitterness.

 

Ingredients: Pasteurized milk, Bacterial culture, Salt, Rennet, Calcium chloride, Penicillium candidum.


Preparation and support

Fleurmier can be enjoyed on any occasion, both in the morning on roasts and at the end of a meal accompanied by a good red wine or a dry white such as Burgundy. Plan to take it out of the refrigerator 30 to 45 minutes before consuming it. It can also be served as a starter or as a hot prepared dessert with various accompaniments such as honey, nuts, fruits, jams, etc.
