30 Day Dry Aged Bone-In Ribeye

The Ribeye Steak comes from the rib portion of the cow. Typically, the cut comes from the best center portion or the “eye” of the entire rib steak.

The ribeye is the steak of beef purists. Dry aging brings out the distinct flavour – it’s so delicious, it’s almost not fair to the other cuts.

Why aged beef?

When beef is aged, it loses water and so reduces in weight, but it takes on a lot more flavour. It’s normal for aged beef to have a darker appearance.
