PEI Brisket

The brisket is the breast area of the cow; all cuts of brisket come from this section.

In general, brisket has a beefiness to it; how you prepare the beef brisket will determine how the brisket tastes. Brining and smoking infuse very specific flavors whereas a braising liquid will impart its own taste to the meat.

It requires long, slow cooking to become tender.

The PEI Certified Organic Producers Co-op (COPC) was established in 2002. The Co-op is composed of organic producers and like minded consumers who wish to see organic agriculture grow within Prince Edward Island.
