Le Pizy is made with pasteurized milk from a single herd of cows from a neighbor of the cheese factory. This soft, bloomy rind farm cheese offers an aroma of fresh milk and mushroom. Creamy white in color, its paste is creamy, tender and sometimes runny. Its sweet and milky flavor, with notes of salted butter, with a touch of bitterness linked to its degree of maturation, is a real delight.

Pizy is the name of a small Swiss village where Fabienne Guitel, one of the founders of the cheese factory, grew up. In this region, the canton of Vaud, the Tomme Vaudoise is made in particular. The Pizy is a Quebec version, produced since 1996.
