The flank is the section of the short loin and sirloin that covers the stomach. Flank steak and ground beef often come from the flank.

Lean and boneless with lots of intense beef flavor. Best when marinated and grilled or sliced thin and stir-fried.

The PEI Certified Organic Producers Co-op (COPC) was established in 2002. The Co-op is composed of organic producers and like minded consumers who wish to see organic agriculture grow within Prince Edward Island.
