Description

Known for its distinctive taste, exquisite aroma, and unique texture, Parmigiano Reggiano® cheese is made in the Italian provinces of Parma, Reggio Emilia, Modena, Bologna to the left of the river Reno and Mantua to the right of the river Po. It is produced according to the same methods used almost 1,000 years ago – using only three simple ingredients and aged for at least 12 months – with great respect for artisanal traditions.

Parmigiano Reggiano DOP Vacca Bruna is produced in the hilly and mountainous areas between the Po and Tyrrhenian rivers, with milk from Vacca Bruna cows that feed exclusively on locally grown forage. The Bruna cow is a breed originally from Switzerland. Its milk is rich in calcium, phosphorus, and casein, which make it ideal for the production of a Parmigiano Reggiano® with an intense aroma. The resulting cheese is nutty, floral, and brothy.
