Description

Known for its distinctive taste, exquisite aroma, and unique texture, Parmigiano Reggiano® cheese is made in the Italian provinces of Parma, Reggio Emilia, Modena, Bologna to the left of the river Reno and Mantua to the right of the river Po. It is produced according to the same methods used almost 1,000 years ago – using only three simple ingredients and aged for at least 12 months – with great respect for artisanal traditions.

Parmigiano Reggiano DOP Vacche Rosse is produced in the hilly and mountainous areas between the Po and Tyrrhenian rivers, with milk from Rossa Reggiana cows that feed exclusively on locally grown forage. The Rossa Reggiana is a native breed of northern Italy that risked extinction in the 70s. The Red Cow milk has a high percentage of casein, ideal for cheeses that go through long ageing periods. The resulting cheese is herbaceous, sweet, and mild.

Agriform is a brand that selects and sources the best Italian cheeses, partnering with some of the most important dairy cooperatives of the Northeastern part of Italy. The cheeses selected by Agriform from its dairy partners are made using milk from specific Italian territories, collected by thousands of member farmers.
