The aged Pecorino Toscano DOP has a persistent, balanced flavour, defined as splendid and elegant in the Gambero Rosso of October '89, an article in which Duilio Fiorini was defined as "the magician of Tuscan pecorino". It is one of the company's most awarded cheeses, winner of the 2007 San Lucio Trophy, best cheese in Italy. Made with sheep's milk from Maremma as per specification, it has a smooth and regular natural rind without the use of preservatives and cylindrical shape. The nose is intense with clear herbaceous hints, in the mouth there is a good balance between flavour and sweetness, with a long and persistent aftertaste, the consistency is compact and easily soluble.
