The Bleu del Moncenisio, or Blu del Re, is an excellent and rare blue cheese. This unique blue cheese is typical of the Susa Valley in the region of Piemonte, a valley in the Italian Alps that shares a border with France.
It is made from pasteurized cow's milk and it is aged for four Months in the area of the Moncenisio which the cheese takes its name from.
The cheese is dense, rich and moist with a spicy finish.
