Crafted in partnership with Caseificio San Pietro, one of 30 makers permitted to stamp its wheels with the "Prodotto di Montagna" designation, this is a small production, family affair cheese that gets sent to Cravero's acclaimed affinage caves for the second year of maturation where they are lovingly tended to until ready.
