This small pecorino is rubbed in tomato paste and olive oil, paying homage to the famous slate rooftops of Toscana. The cheese is then aged in the caves of famed cheese distributor Luigi Guffanti. Both young and matured Pecorino Maremma boast very approachable flavours.
